Tips To Make Eating More Fruits and Vegetables Convenient

Posted by Stephanie

Is lack of planning keeping you from eating your fruits and vegetables?

The other day I was in a deli eating lunch. I walked up to the counter, ordered a salad, and watched a lady behind the counter make it. Within minutes, the salad was done and I was on my way. As I ate I thought about how delicious it was and how if I had a salad bar in my kitchen I would definitely eat more salads. Do you ever feel this way? A big reason why we don’t eat healthier is because we don’t make it convenient.

Is this true of you? When you come into the kitchen to grab a snack or make a quick lunch for yourself or your family, you’re usually in a hurry or too starved to take time to prepare something healthy. The thought of washing and cutting up vegetables seems overwhelming. You want something fast, so you usually grab the handiest thing. That could be cookies, chips, prepackaged meals, etc.

I know what you’re thinking. I don’t have room to put a salad bar in my kitchen. I want you to rethink that. Having a salad bar can be easier than you think.

Make a list of all the food that you love to eat on your salad. Don’t forget to include things like raisins, cranberries, various nuts and seeds, chick peas, or anything else that makes your mouth water. Also, skip the iceberg lettuce as this has no nutritional value and try romaine or spinach leaves. Pick these up on your next trip to the supermarket.

Wash and cut up your vegetables the minute you get home from the store. Don’t forget to wash and cut up the lettuce too or buy it already prepared to eat. Waiting, most likely, will prevent you from doing it. This has been true for me at least.

Next, put them in a chip and dip container, on a platter, plate, or in baggies. The next time you go to make a salad the most time consuming part will already be done. Just grab a bowl and be like the lady in the deli. Pick and go.
